What’s New
The OPV
The most thrilling enhancement in the Evo Pro is the capability to attain 9 bar extractions similar to prosumer machines, which is made possible by the addition of a new OPV. It is widely known that many people modify their Classic Pro with a lower pressure OPV spring, which is a popular aftermarket upgrade. After extensive research and testing, an OPV was chosen to be included in the North American Evo Pro, which eliminates the risk of voided warranties and allows for brewing at 9 bar pressure.
But, why 9-bar?
9-bar is what most commercial espresso machines use to brew. Studies have demonstrated this is the ideal pressure for extraction and results in the best flavor, consistency and crema for most beans. From what I can tell, the original Classic Pro was set at around 12-bar which is helpful when using a pressurized basket. However, most home enthusiasts prefer the classic pressure of 9-bar, and swap out the factory OPV spring to improve extraction. The mod is easy. It took me about 10 minutes on my Classic Pro. Now it’s obviously no longer necessary if you opt for the 2023 edition.
New Portafilters
Gaggia Classic Pro portafilter leaves a lot to be desired, usually it is the first item to be upgraded. With the Classic Evo Pro, it has undergone a subtle change with the replacement of the previous chrome-plated brass portafilter with a new polished stainless steel 58mm commercial portafilter. The new portafilter has a mass difference of approximately 1g but still feels weighty in the hand. It includes the same single and double commercial baskets, a 2-way pin, and a commercial double basket as the previous one.
Additionally, it is compatible with premium baskets from Baristapro, BIT, and IMS. The significant difference between the two is that the new steel portafilters have a highly polished appearance and are free of any visual blemishes that may occur during the chrome plating process.
The Brew Group
Gaggia’s update to the brew group is a perfect example of putting emphasis on design over dollars. To preserve the aesthetics of the brew group which was previously made of chrome-plated brass that could flake or peel over time, Gaggia opted to design a new polished steel cover that wraps around the brass group. Not only is the visible brass behind the cover a visual treat, but the steel cover extends to the inside of the machine as a mounting plate for both the boiler and pump to reduce noise while brewing.
Anti-Scale Boiler Coating
An unseen but not unsung improvement, the boiler on the Evo Pro now features an inert and food safe coating designed to reduce corrosion and scale buildup. This improvement aims to extend the longevity of the machine and ensure better long term performance by reducing the likelihood of scale buildup and all of its associated issues.
